New Things Wednesday- Corn with Shallots and Canadian Bacon

I first had this dish at my cousin’s but it’s the first time I’ve made it so it counts!  It’s such a quick and easy dish and tastes so good.

1 tablespoon Olive Oil
3-4 large shallots chopped
10 slices Canadian bacon chopped
1 bag of frozen white corn (or 5-6 fresh corn cobs, kernels removed, will take longer to cook)

In a large pan, add the oil and shallots to the pan and cook until slightly caramelized.

Add the Canadian bacon and continue to cook for 5 minutes to caramelize more and brown the bacon a little.

Add corn and cook until heated through and flavors have blended together 5-10 minutes.  Add salt and pepper to taste.

I forgot to take a picture when done, but I promise it’s really tasty!

Okay, I’m dead tired from 5 hours of cleaning/organizing after a long day at work so I’m going to bed!
