Sesame Sugar Snap Peas

As promised, here is the recipe for sesame sugar snap peas my aunt threw together. It’s so simple and tasty and I’m glad that I have a new vegetable that I like to eat.  Sugar snap peas haven’t been my favorite thing to eat, but they are delicious with a little bit of sesame oil and salt.  I’m telling you, my aunt is one of the best cooks I know and I can’t wait to learn new recipes from her. She made an amazing pork tenderloin (one of two recipes I want to post in the future) over the weekend too that I’m obsessed with!

This recipe serves 2- 1/2 cups servings at 0 pp (zero!) or 1- 1 cup serving at 1 pp.

  • 1 pouch sugar snap peas (roughly 1 cup)
  • 1 tsp sesame oil
  • 1/4 tsp black sesame seeds (you can use white if you can’t find them) you can probably find them at most stores, but if you can’t try Whole Foods or some place like that.
  • Salt to taste
  • a splash of water

Rinse and drain snap peas and trim off ends. Remove strings if they have them and you don’t like them.  Our bag had stringless sugar snap peas… Add to a small or medium pan with 1 teaspoon sesame oil.  The oil coats the peas very nicely and a little goes a LOOOONG way.

Add a little water to help them steam a little or leave them alone if you like them crunchy.  They only need 5 to 10 minutes (until desired texture) to cook.  Salt and pepper to taste and sprinkle with sesame seeds.

They would be perfect with any asian dish or whatever you like. As you can see, we had them with Italian food. We’re unconventional like that!

Okay I’m sorry for the lack of recipe posts! I’m hope to get more out in the future. The holidays were crazy busy and I’m hoping to get back to my normal schedule and more posts in 2014. There! That’s my new years resolution! Woo Hoo!
